Homemade Vegan Salsa Chili Recipe

Nothing beats a good homemade salsa chili and this meatless Monday meal is so good you won't even miss the meat. The ingredients listed below are basically just serve as a base to start off with. Other veggies such as zucchini, carrots and celery can be added. So as you can tell, like most chili recipes, this is a super flexible one. I love flexible recipes where some ingredients can be subbed for others because I tend to make crazy trips throughout the grocery store. Sometimes I end up making trips to opposite sides on the store several times because I've forgotten something on the list. Sometimes, I just give up, go home and make this for dinner.

Homemade Garden Salsa

This year I began volunteering in a garden. I have learned so much about organic gardening, community supported agriculture and growing my own produce. On Tuesday afternoons we teach kids about gardening. Last week, we had an Earth Day celebration which included making our own less spicy garden salsa recipe with veggies we had grown in the garden. It was so fresh and tasty.

Later, I was inspired to make my own spicier restaurant inspired garden salsa. Over the years, I've made and tried many different salsa recipes. This one is good. Of course, it pairs well with tortilla chips but can also be used as a base for enchilada stuffing or vegetarian chili.

This is such an easy lazy salsa recipe, basically you just have to roughly chop the vegetables and then toss everything in the blender.
